Coconut Porridge With Honey, Raspberries and Pumpkin Seeds
I am one those unfortunates that cannot consume dairy without my breastfed baby wailing to such an extent to give a banshee a run for her money. I’ve since become somewhat of an expert on milk alternatives. Unfortunately for my wallet, it’s not a one-size-fits-all like the ol’ bovine juice but after trying almost every alternative out there I’ve narrowed it down to two, depending on what I’m using it for. Alpro Coconut (with rice) milk and Alpro Soya +1 (lots of added goodness compared with normal soya milk).
Now most things just taste better with actual milk, but one of my surprise concoctions was porridge with Alpro Coconut as, by gum, it’s utterly delicious. I would even go as far as saying it is tastier and just as creamy textured as the dairy version. Mix it with honey, a handful of raspberries and a pinch of pumpkin seeds and hello, hello, we’ve got breakfast utopia.
